Church Pancake Breakfast- Holding pancakes warm

We are having a church pancake breakfast for about 200. The menu is pancakes, scrambled eggs, sausage, fresh fruit and of course, beverages. Is there a way to do the pancakes in advance and then reheat in warmers? What is the best way to hold the pancakes warm without having them deteriorate? Also, I want to do the sausage the day before and simply reheat in large covered pans in our commercial ovens. Does this present any problem? We are serving buffet style and I don't want to risk running out of pancakes. Thanks in advance for any advice!

Pancakes don't reheat very well, and they don't hold too well, either; you will notice that the good breakfast buffets either make them as ordered, or refill with fresh every few minutes. You might look at the recipe I posted for "baked French toast" which is good and does hold.

The sausage is fine reheated, assume you mean patties, you need to reheat tightly covered and use an instant read thermometer in the middle of the pan, heat to 165-180.
