My sons wedding is this weekend. I have alot of things straight,but---they want to add fried rice to the menu. How much rice would I need and can I do that for 100. thanks so much Cara

Fried rice is a VERY BAD thing to add, especially for a buffet, especially for a wedding. Good fried rice has to be cooked over high heat at the last minute, which means either you miss the wedding (I am not kidding) or you serve bad rice. If you have a good Chinese restaurant in town, you could arrange for them to deliver 4 gallons when you plan to serve.

A good rice pilaf is an option. You need 8 pounds dry rice per 100 if it is the only starchy dish, 5-6 if there are other starches. The oven-baked rice on the recipe box page is a good option. 1 1/2 cups dry rice is about 3/4 pound.

Thanks so much Ellen. I showed my son your response---so we are calling the chinese restaurant in town ---if that doesn't work out I'll do the rice pilaf. Thanks again so much you saved my bacon. Cara
