| ellen 09/03/08 | This is a somewhat unusual menu as stated.  Are the baked ziti and the "chicken and pasta salad" intended as a hot and cold entree?  Or is chicken the meat with the pasta salad and the ziti as sides?  You need to say what kind of salad, and possibly to add a vegetable with this menu, also. I assume the bruschetta is an appetizer? It is unusual to offer just one. Are you also responsible for beverages and desserts in addition to the cake? Write back and I will try to help. | 
| Kandi 09/09/08 | Sorry, I was not clear.  Baked ziti is the main course.  The sides will be Meatballs  (1/2Turkey and 1/2 beef.)  Green beans. Green salad. Pasta salad.  We have eliminated the chicken. We are renting a fountain and plan to keep it filled with punch. The cake is provided. However, I was considering some cookies to suppliment. So far, I planned on purchasing Ricotta - 18lbs Mozzarell- 18lbs ziti- 20 boxes Green beans-15 lbs sauce- 18 jars meat loaf mix- 25lbs ground turkey- 25lbs sausage - 5 lbs 
Do think that will be enough for 150 guests? | 
| ellen 09/10/08 | Hi, again. I would use about 15 pounds of dry pasta with this many people, about 3 1/2 gallons of sauce in the casserole plus what you need for the meatballs. This is a LOT of cheese for the amount of people/casserole, something in the range of 12-15 pounds each would be more usual. Meats are plenty. You will probably have some left. I would get 30 pounds of green beans. Pasta salad is an unusual choice with the menu. I would probably go with a relish tray or antipasto tray instead. If you do cookies or bars you need one of each kind, up to 4 per person. It is wise to plan coffee for the dessert (see the beverage page, dinner coffee amounts) and a sugar free option for the drinks. It is also good to have a nibble table or appetizer table to keep guests occupies until the couple arrive after photos and clothes changing. |
