too many choice

We are catering our son's wedding in early October. We are thinking salad bar, cheese potatoe casserole, baked beans, lasagna, roast beef, ham, and turkey tenderloins, and bread/rolls. There are ~80 guests. Are we giving too many choices? Should we limit only two meats? Salad bar will include hard-boiled eggs, cheese, radishes, cucumbers, etc. How do I judge how much of each I should have?

This is a very heavy meal and you do have a lot of entree choices. If I were re-working the menu, I would have either the cheesy potatoes or lasagna, but not both, I would use a green bean casserole or another vegetable casserole instead of the baked beans, and I would offer the roast beef and one other meat, allowing 5 ounces cooked beef PLUS 3 ounces of the cooked second meat for each person. As to the salad bar, there is a good article on self service food bars with lots of tips and ideas in the big pots section. You would want 2-4 ounces of greens plus about 6-8 ounces of toppings per person, plus dressing, an egg is 3 ounces, for example.

Thanks for the help. Some of the menu items I can't change, since they are what friends have offered to make (or the couple has requested specifically). I could use a little more help on my salad bar though. I based the quantites off of what is readily available at Sam's. Can you tell me if you think I need MORE of anything?

3 cheese blend - 5 lbs
grape tomatoes - 2 lbs
bell peppers - 6 ea.
artichokes - 62 oz.
black olives - 55 oz.
hard boiled eggs - 1 dozen
cucumbers - 3 ea.
croutons - 64 oz.

I'll be getting a couple dressings from local restaurants. One is Arcobasso's, which is a thick based creamy italian, they sell them in 32 oz. size, and another is a oil based Italian that comes in 12 oz. size. I was thinking 1 Arcobasso's and 3 of the Italian. Is that enough and should I have Ranch or 1000 Island on hand?

I would increase the trimmings below:

3 cheese blend - 5 lbs-is this the parmesan style dry, or shredded? O would alow 2 pounds dry PLUS 2 pounds soft shredded, and or feta and or blue cheese
grape tomatoes - 2 lbs- increase to 4 pounds
bell peppers - 6 ea.- get multcolor and allow 9-12
artichokes - 62 oz. OK. Chop them coarsly.
black olives - 55 oz. OK
hard boiled eggs - 1 dozen allow at least 3 dozen. They are cheap and usually popular.
cucumbers - 3 ea. Allow at least 6=8
croutons - 64 oz. OK
It woulsd not hurt to add one of the half gallon jars of marinated mushrooms or three bean salad.

The planned dressings are OK, but you need to add a quart of low fat Italian or rranch and shakers of plain olive oil and vinegar.
