I catering my own wedding and I wanted to know about how many pans is needed for 4 different dishes ( shrimp pasta, jamabalya,and a macoroni ) for 300 people for a wedding reception ?

Norketha, that is just three dishes. Please tell me the fourth dish, whether it is buffet service, and what month and time are the ceremony and reception. All affect amounts.

Also, 300 is a very large reception to self cater, especially if you are inexperienced. Please read my article under "wedding dinner" (button on the top of the main cook talk page) before going further with your plan. For example, you might decide that a 1 pm ceremony with a reception rather than a full meal might be more within your budget and skills.

Ellen, the fourth dish is dirty rice.The meats that will be servered are honey baked ham and either oven roastrd or smoked turkey . the ceremony will start at 4pm and the reception will follow at 5/5:30pm.

OK. People will be hungry. You should be planning for an hor douevre or nibble table to be out for about an hour while you do photos, change clothes, etc before the meal is served.

About the meal: along with your ham and turkey, the shrimp pasta, jambalaya are basically entree or main dishes; with this many entrees and so diverse, it is a little difficult to estimate the mix. People tend to take more, and some of each, when there is this kind of selection. I would allow 4 ounces cooked turkey PLUS 2-3 ounces cooked ham PLUS 1/2 cup EACH of the shrimp pasta and jambalaya PER PERSON. Actually, I would omit the shrimp pasta, which cannot be made ahead, and use the shrimp in an appetizer or salad, and just allow the 1/2 cup jambalaya.

macaroni, dirty rice are side dishes. Since the jambalaya is also rice based, I would allow 150 people worth of dirty rice and 200 worth of macaroni.

You also need vegetables and salads, beverages, and desserts.

I am planning a wedding for 500 people. I am serving watermelon, cantiloup, honey dew, and strawberries. How many of each would I need if this is the main dish, with shebert on it?

I need 2 good recipes for punch for a reception the is lime green, and dark orange colors. No alcohol for about 250 people. do you have a great recipe??? For Both?

Deamm, are you meaning a fruit plate? See the fruit tray article for help with amounts. You need to add good bread/ rolls with cheeses and cheese spreads, or other protein component. Serving 500 people sherbet that doesn't melt is just about impossible; consider cottage cheese, ricotta is even better, instead.
