I will be having in open house (wedding reception) for 250-300 people. Can you let me know how much I need of each radish, carrots, broccoli, cauliflower for a veggie tray. Also the amount of dip. Also on the menu is pulled pork sandwiches, coleslaw, pasta salad, relish tray, corn and chips. Also how much chips should I have in hand?

Mary, since I posted all the quantity tables I use on site in 2004, I ask my readers to prepare an estimate, post it and let me check it. I rarely do the initial estimates.

You will have an easy time of it, as there is an entire article on veggie trays with amounts, preparation of the veggies and discussion about dip amounts. Button is at the top of the main cook talk page.

It also has a guide for relish trays; the large tray described is plenty for 100 when served with other veggies.

The chips are usually 6 pounds potato or 8 pounds corn for 100 people. Increase a bit if it is a young crowd.
