I am planning a wedding for approx. 300 people I am wanting to serve Ceaser Salad, Broccoli Salad and Pasta salad. Would I go with the amounts for 100 people each to add up to enough for 300? Or how do you figure the amounts for each one? Thanks I love your site. Kathy |

The pasta salad, if it is the main starch and everyone would take some, you use three times the amount for 100- about 18 to 20 pounds dry pasta to start. The broccoli salad is in the vegetable range. If you have hot vegetables also, make about regular 200 servings each of caesar and broccoli. If you do not have hot vegetables and it is the main vegetable. make 300 of the broccoli (I would not put the dressing on the last third until I saw how it was going), and about 200 Caesar. You want to end up with about 30 gallons totla salads for 300. |
