Ellen I am catering a wedding for 350 people in Aug. The bride wants Chicken Alfredo pasta and baked pasta I make with sausage, Cheese, shredded eggs and red sauce. Also three salads and bread. I am still working on my Alfredo recipe. I would like to make this ahead since it is about 30 miles away. Any suggestions and how much pasta would you make? Help I have been stressing over this one!Thanks, Rosemary |

Rosemary, this site is basically for family or non-pro events, as I am not willing to accept liability for pro event planning for free. I would basically allow 10-12 pounds dry pasta per 100 for main dish pasta dishes. Do have a look at chef2chef.com, a great pro site with bulletin boards. |
