Beef and Chicken Gravy for 100!!

I need to make beef and chicken gravy from scratch for 100 plus people on Saturday evening. I have made gravy in small quantities and it always turns out great...but I am not sure how to do it for so many people, and certainly not from scratch.

Please help!

Hi,
I think you will be shocked at the cost of this little project! You need about 1/3-1/2 cup per person, depending on the menu esp mashed potatoes.
I would get out my trusty cast iron Dutch oven and make roux now. Then buy the best beef consomme and chicken broth you can find, lower salt if possible.
There are dry mixes which are not bad at the restaurant supply houses and warehouse stores, but try it first. Fresh parsley for thew chicken helps.
My VERY FAVORITE fast beef gravy is Knorr's oxtail soup mix (dry, I think it is called tomato beef now), made with something less than the required amount of water. Very brown, rich, and beefy.

Knorr Tomato Beef (Oxtail Soup)
I have been trying to find the Knorr Oxtail Soup and read on the internet that it is not sold in the US anymore. Do you know why?

You read right, and I have used up my last precious boxes! I think people did not know what oxtail soup was, and tomato beef just doesn't sound wonderful, does it? Knorr is making a mint off their new packed soups, suaces, dips and mixes, I think oxtail just got pushed off the shelf...

Thank you so much for your response. I contacted Knorr customer service and was told that they have discontinued making Knorr Oxtail Soup completely...that it did not sell very well. How sad!

It is still available in Canada, Ireland, Britain and the Netherlands, and I am trying to find a shipper who will ship to the USA.

If one cannot locate any Knorr tomato oxtail soup, and wants to make a beef pot roast with all the flavor that the Knorr product added, and is sorely missed without, can you recommend any way to substitute anything to approximate the now discontinued item???

I use a can of campbells consomme undiluted, half a small onion grated to paste and a tablespoon of tomato paste to approximate.
I have had a reply from the Dutch company, they will ship six packages for about 25 Euros, shipping takes a few weeks (it gets inspected by US customs).
