Hi Ellen:
I am having 150-175 people at the wedding reception. Can you please tell me how much of each thing I need, since I am having a good bit of variety? The menus is as follows:
Meatballs
Wingdings
meat trays
sandwhich rolls
Potato Salad
Macaroni Salad
Spaghetti Salad
Veggie Tray with dip
Chocolate fountain with strawberries, mini pretzels, and marshmallows
Potato chips
soda
ice

See the chocolate fountain article and the beverage planning table for the fountain and soda and ice, and the veggie tray article for the veggies, all these are stand alone items so you will need enough for each.

You want ten gallons total salads for each 100 people, 4 potato, three of each of the others. I might switch one to cole slaw or marinated veggie salad, this is a pretty starchy selection.

The biggest difficulty usually arises in the multiple meats situation: you want
Meatballs- 3 ounces per person- 1 pound for 5
Wingdings-6 ounces per person- 2 pounds for 5
meat trays- 1 pound for each 3 persons if you don't add cheese.

If you add sliced cheeses, you want 1 pound meat for each 4 persons PLUS 1 pound sliced cheese for each 6-8 persons.

6 pounds potato chips per 100. Add salsa as a fresh colorful dip for this rather heavy menu- 1/4 cup per person.

Use these guidelines to prepare your own estimates when you decide on the number of guests. Then if you wish you can pprepare and post a list and I will check it ofr you.
