Ellen, I see the quantities everywhere for chicken fajitas - now I'm looking for a good recipe for the chicken portion - I have to keep the grilled peppers/onions separate because I have lots of veggie haters. Should the chicken be grilled or baked - do I marinate? Also - this is a graduation party, outdoors with no electricity - food will be served 12-5 - will the chicken be ok in those disposable aluminum chafing dishes with candles underneath? I'm serving beef (for tacos) too - will that be 'ok' - how do I keep it warm enough and stop it from drying out? |

First the bad news. No, you cannot keep food over candles safely for 5 hours- 2 is the maximum. You need some propane grills or professional catering storage units (called "cambros"), or a change of menu. If you have a lot of veggie haters, why do fajitas? What about cold fried chicken? Yes, you do marinate meat for fajitas. It is usually grilled and then shredded- not iintended to be held. The juice in the beef is what will keep it moist, that is why fast food tacos can be so drippy. Marinating the beef or chicken for fajitas helps it not to dry out. |
