Make Ahead Asian Buffet

Hi there.

I want to have an Asian inspired buffet that can be mainly made ahead of time. I will be using steam tables to keep things warm.

Proposed menu:

Coconut Curry Shrimp - was thinking I could cook sauce and then an hour or so before eating I would heat the sauce and cook shrimp and then place on steam tray.

Kung Pao Chicken - I think the entire thing can be made ahead of time. I have had problems with meat getting tough in my asian recipes. perhaps it is the sugar content or I cook it too long. Any suggestions, if I want to make ahead and heat that day?

Nutrella (soy chunks) - need a good asian recipe using this. Do you think I can batter and fry them ahead and then have a sweet and sour sauce.

Lo Mein -- how do I make this ahead but make sure it is not over cooked when we eat - since it will be on steam tray for a while

Any other recipe suggestions would be appreciated and advice on how to prepare things ahead to be placed on a steam tray. I really want to enjoy my guests and don't want to be preparing food when they arrive. Please help.

Although there are Chinese buffet all over thhe country, Chinese food is really made to cook fast and serve immediately. If I stayed with Chinese, I would use fried rice, not lo mein for my starch.

Actually, though, I would go Indian rather than Chinese, and use biryani rice or pilau as my starch dish. The dishes hold better, the condiment display is very attractive (chutney, peanuts, yogurt, etc), the breads are delicious and the desserts are very popular, especially the kheer or sweet rice pudding.
