Hi Ellen, i wrote once before but for some reason i guess you didn't receive it. I am doing a church dinner for 200 and need to use the steam tables for lack of oven space. Can I make a italian green beans (frozen green beans mixed with tomatoes, onions and garlic)in just a steam table or must i cook them first and then just heat them in the steam table? Also, i could use an idea for a sauce for top rounds that will be cooked in the ovens. I hope if at all possible to hear back from you as soon as possible. Thank you in advance. |

Thanks for writing back- sometimes a message gets eaten, especially in a long thread. The steam tables are not hot enough to SAFELY heat anything- only good for keeping above 160 once heated in the oven or pot to 180 degrees. What kind of sauce? A gravy? I would use mushroom. For a spread, a horseradish and sour cream sauce is very spicy and traditional. |
