I am going to a wine festival as a food vendor. I plan on serving tarragon chicken salad, hummus, smoked salmon pate and curry shrimp salad with grilled bruschetta bread. I am planning on 2 oz of spread per plate. I am figureing that I would need aprox 23 cases of bread to give 8 slices per plate if there are 20 loaves per case at 20-25 slices per loave. I am planning on making 50 pounds of each spread. Does this sound right? |

Kelly, take this question to the catering board at chef2chef.com. Check your math. 200 pounds total spread is only 1600 2 ounce servings. a 2 ounce spread makes one thinly spread standard size sandwhich. So I think you have too much bread for this amount of spread. |
