I'm having a party, and serving beef and chicken fajitas.....I'm planning to grill the meat ahead of time, and then somehow reheat at serving time. Any suggestions for reheating and keeping it warm on a buffet....I am concerned that putting them over steam might might them mushy....I'm serving for about 50 people, outdoors.

About the only really good way to reheat is on a grill or griddle...
