How far in advance can I start preparing the food? We are having a saturday afternoon reception. We plan to serve coldcuts and rolls and an assortment of salads- potato, pasta, fruit, coleslaw. Can the meat trays be made up and the salads mixed up a couple days in advance? |

These items can be made up the day before, but you MUST refrigerate them continuously. Food should only be out of refrigeration 4 hours total (that is, BOTH prep, transport and serving) before being discarded. A few veggies can be made even further ahead.
