Hi there. I'm doing a dinner for about 100 people. I saw the pages for feeding 100 - GREAT information. Wondering if you can help with a quantity of "cheesy potatoes" so I don't go way overboard, and also for a 7-layer salad. If there's a page this info is already on and I just haven't found it...sorry! This site is so helpful! Thank you!! |

Just posted that cheesy potato recipe, made in the electric roaster, again this week- see the cheesy potato thread down a ways on the topic list or check this message: www.ellenskitchen.com/forum/messages/9764.html Make at least two roasters for 100 people. I do 3 recipes in 2 roasters if I expect heavy potato eating (men, teens, after skating, etc) |

That's great! Thank you! I wonder - I prefer cheesy potatoes with cubed hashbrowns rather than shredded - for the recipe you posted, does it matter which type of potato we use? Also, when you do 3 recipes in 2 roasters, do you increase the cooking time? I don't expect real heavy eaters, but one of my favorite things ever is leftover cheesy potatoes!! :-) Thanks again! |

Oh - I also meant to ask - do you stir that mixture at all while it's baking in the roaster?? |

Natalie, I have tried to post twice, but here goes again: Cubes are do-able, just be sure to thaw in fridge and drain. Yes, cooking time increases about 1/3 in the roaster with the increased volume. Temp at the center on a quick read thermometer should be at least 165-180. Preheat the roaster for 20 minutes and pay attention to the cautions about the temp of the mix! Take the lid off as rarely as possible, you lose a lot of heat, adds about 10 minutes cooking time with each stir- so stir if it needs it, but be aware. If it gets done early, just turn down to 185-200 to hold. |
