I am catering a wedding reception for 200 people and the bride is wanting a Italian theme thinking pasta dishes will serve more people. The menu is a ceaser salad, bread sticks and four pasta dishes; my question is do I prepare each pasta dish enough for 200 people. The bride is on a small budget. Any ideas. Thank you |

No, you do not prepare 200 of each. But unless you tell me what dishes, I can't begin to help you estimate; people will eat way more lasgana than plain spaghetti marinare, for example. If you have baked mostaciolli with sausage, you will use more of that than penne vodka. |

The dishes are Toasted Ravioli, Umbrella Penne, Cold Pasta salad and Chicken Tortellini along with caeser salad and bread sticks. |

OK. Treat the pasta salad as salad. Or I would talk to the family about omitting it and using a marinated vegetable selection (hot) or antipasto type salad instead- artichoke hearts (frozen), zucchini, etc. Or whole green beans or broccoli (not chopped). This would fill the plates better and add an attractive variety. Plan on 90-100 servings each of the tortellini and ravioli and about 60 of the penne. With multiple choices people tend to take some of each. |
