Hi Ellen, We've invited 90 people to the big pool party. All rsvps haven't come back yet. Just want to check food amounts with you. For appetizers we have 10lb of buffalo chicken dip with tortilla chips(no clue on how many to get) and a 25" tray of vegetables and 25" tray of fresh fruit(both with 4 cups of dip each). For entrees we have 21 racks of ribs approx 49-50 lbs., 40 lbs of bbq chicken(thighs and drumsticks),22lbs of grilled shrimp that we'll have on skewers, 25 lbs of beef for burgers with all the fixings, 40 hot dogs and 40 hot sausages. For sides we'll have grilled vegetables(quantity?),potato salad(quantity?), pasta salad(quantity?) and garden salad(quantity?) For dessert we have a full sheetcake, 3 cheesecakes and a 5lb assortment of cookies. What do you think? |

You have plenty of meat and dessert, except if they are really delicious cookies you could use up to 3 pounds as much. For sides, you want to grill or oven roast about 25 pounds of various vegetables, and about 10 gallons total of potato salad, pasta salad, and garden salad or slaw. 6 pounds potato or 80 pounds corn chips plus 1/4 cup dip and/or salsa per person. |

About 10 pounds in a gallon for potato and mac salad. I would do 3 1/2 or so potato, 2 1/2 to 3 pasta, totals; and about 3 ounces of tossed per person- |
