we are feeding 100 people we are having grilled lemon chicken tenders, sausage and peppers, pasta with sauce, roasted potatoes and ceaser salad, and rolls. how many # 10 cans of potatoes do I need, pounds of chicken and sausage, the pasta I was thinking 4-5 pounds since there are quite a bit of items could you let me know thank you ellen |

Why are you using canned potaoes for roasting? Fresh reds, split in half are perfect and much tastier- 35 pounds. If canned, about 4 cans , which is 3 gallons. I would allow 1 pound of tenders for each three persons PLUS 1 pound of sausage for each 4 persons. You need extra to make sure everyone gets what they want and because people take more, and some of each, when there are several entrees. |

Hi Ellen, I am throwing a suprise 50th birthday party for husband next month & need some advice. I have invited approx 165 people but realize that not all will show up, although I am going to assume for now that 100 will be in attendance. Here is the menu that I have come up with so far:
*Baja Mexico Style Tacos-Carne Asada, Chicken & Pork("the taco lady" prepares these for us on site, cooked to order) I was wondering what other types of salads would be acceptable to serve with this type of meal? If I did fruit &/or veggie trays, how many would you suggest? Also, I am hoping that one keg of beer, 25 bottles of wine, 4 cases of soda & 4 cases of water will suffice. I am okay in my assumptions so far? |

Avocado/ guacamole yum. Order cases from the produce manager, tell when you wanyt to use them, and they can sell you some that will be perfectly ripe for your party. A mexican style fruit cup with melons, jicama, cucumber, strawberries, pineapple, mango. Lime juice, chili pwder and salt on the side. For amounts see the fruit tray for 25 on the fruit tray page and make 3-4 times that amount. You have enough wine for about 35-40 people. Beer drinkers drink about 46 ounces (1 1/2 quarts/liters), so figure whether you need two basede on the size of the keg and how many beer drinkers you expect. Remember to stop serving alcohol about 1 1/2 hours before the end of the party. Mexican coffee with cinnamon and whipped cream would be a great alternative. |

Hello, Bill, This is a high end menu, a nice change from many other requests. However, you have too many entree items for 50 people (good caterers go with two or three). I would do sausage and peppers, ribeyes and chicken thighs and ditch the burgers and dogs. Also treat the shrimp cocktail as an appetizer, and consider adding a cheese tray or some bites of some kind to keep people occupied during the grilling- about 4 bites per person. With 50 people, here is how most caterers would estimate it: 5 ounces cooked ready to eat beef per person, which is 1/2 pound raw PLUS 1 chicken thigh per person PLUS 3-4 ounces sausage per person. This may seem like a lot, but people take more and some of each when there are such attractive choices. I would get small thick rib-eyes. Shrimp cocktail quantities are covered in the appetizer planning table. I have a really excellent antipasto tray on site, but if you are mixing a pasta salad with antipasto accent, you need a bit less than 2 gallons. You need good hot bread with this meal, foccacia or ciabatta would be perfect. |

A kilogram or kilo of beef is 1000 grams, 28 grams per ounce. So it is a fraction under 40 ounces, or about 2.6 pounds. 1 1/2 kilos is about 4 pounds. What is Holy Ghost Soup? |
