Tri tip & Chicken for 75 people You want 5 ounces beef cooked ready to eat PLUS 3 ounces cooked ready to eat chicken. That is 7-8 ounces raw lean boneless beef per person PLUS 45 to 50 pounds of chicken pieces (bones and skin) total OR 60 pounds quarters- quarters have more bone and a bit less meat than pieces. |

Tri tip & Chicken for 75 people This counts as 50 people for estimating purposes. Tri tup being very popilar, you allow 2 punds raw for every 4 to 5 people PLUS 1 poece of chicken per person (1 chicken for 8 people. This gives everyine their first choice without too many leftovers. YOU slice the tritip, nice and thin, and it helps iy yasye better and go further. |
