recommended amounts for 70

Buffet style reception at 7PM at family home for 70. I plan to pick up most of the items but I am confused on how much to buy/make if you are having several items. If it says this amount for 100 people - does that take into consideration other food times. Tentative menu

Jambalaya
chicken pasta
chicken fingers
sandwich tray (considing spiral ham w/rolls and condiments)
veggie tray
fruit tray
spinach & artichoke dip
Meat balls
Little smokies
mexican layer dip w/chips

Can you recommend amounts for each and also if this seems balanced.

My amounts for 100 are planned for party size servings of a single dish unless noted otherwise.

The fruit trays, veggie trays and dips are covered on the various appetizer and tray pages.

The difficulty here is that you need meal amounts and have a LOT of entree-type dishes, making it very hard to estimate. People take more, and some of each when there are many choices. You want to end up with about a pound edible entrees per person in addition to the fruits, veggies and dips.

I would probably get 40 servings each jambalaya and chicken pasta; 2 ounces each chicken fingers, meatballs and little smokies, and 80 pieces of sandwich. This is just a best guess, you will have plenty and some leftovers. Do let us know how it turned out.
