Hi, I'm preparing fresh green beans for 50 people and have no idea how many pounds of grenn beans to purchase or how to prepare such a large amount. Can you help? Please Thanks |

12-13 pounds raw. You can wash and trim them, put them on a rack in a big roasting pan, preheat the oven to 350 for 20 minutes while you boil water and make a tight fitting foil lid for the pan. Add boiling water to the pan, seal up the lid, and put in the oven for about 15 minutes- or longer if you like them very done. Or boil about 4 pounds of tiny potatoes half done and put the cut up beans, some boiling water, some chopped ham or bacon in a big pan and simmer about ten minutes covered, then add the potatoes and simmer about 20 minutes until done. You can also do these in an electric roaster. I thinks they are improved by using less water and stirring in a couple of cans of diced tomato in juice and some Greek seasoning. |
