Can you give me a easy recipe for scalloped potatoes for 50 adults? I was going to use the boxed kind, but if you can help me out it would be greatly appreciated. Thank You |

Use 20 pounds of raw potatoes, use baking potatoes, not red/new, if you like the usual creamy texture. 5 quarts white sauce, mix 3 pounds shredded cheese and 1/2 to 1 pound ground Parmesan cheese. Butter the roaster, dust it with the rest of the parmesan cheese, use the sauce HOT, or it will double the cooking time. A pan that is 2 inches deep in potatoes cooks almost twice as fast as a pan with 4 inches deep potatoes. Cooking time varies greatly, depending on size of pan(s) and temps used. Your salt, pepper, and chopped Parsely are to taste. |
