I am needing to serve sliced ham and sliced turkey breast to a large group. I have 2 roasters. I was planning to place around 20-25 lbs. of each meat sliced (1/4" thick) or how every much will fit in the roaster. Then on the turkey, I was going to add gravy and heat. To the ham, I was going to add the standby of brown sugar and pineapple (juice & slices). Can you tell me what temp would be best to heat it and how long it would take? I am slightly limited to only have less than 3-4 hours to heat it. |

There is a good discussion on reheating turkey in the big pots holiday cooking section. You need to preheat the roasters for a full half hour before adding the meat, and you need to heat the sauces or gravies bubbling hot on the stove. Then when you layer the meat and sauce in the preheated roaster, they will safely bring the meat to temp for serving . If the ham is precooked, ready to eat, it will have a suggestion on timing.
