I am trying to esitmate a cost per person and how much of each item. This is my first big catering job. Fresh Fruit, cheese tray, vegetable platter, stuffed mushrooms, crab dip or ham rolls, chicken fingers, nuts and mints. |

Melissa, you have a lot to figure besides the bill, please go to chef2chef.com and read their discussions about contracts, pricing, etc for caterers. The food cost is 1/4 to 1/3 the total bill. You need liability insurance, a contract with billing arrangements and penalties as well as who gets how much food and who is responsible for what (set up, clean up, rental of equipment, etc.) BE SURE you read my articles on self-catering and on food safety for some additional advice. You may need a license or permit and you will need to hire at least two other cooks and 10-16 servers if you are responsible for serving. Be aware that in most states and counties it is illegal to prepare food for sale in your home kitchen. You can prepare at the customers house (basically impossible for 250 people) or use any publicly licensed kitchen such as a church or cafeteria kitchen legally. |
