HI! We're going to my mom's this year for a combined St. Patrick's Day/early easter dinner. I was thinking I would bring a mock roast for my own vegetarian family (husband plus three kids) to eat since my mom will probably make corned beef. I usually don't make mock roasts and especially not to bring to my (mocking) family gatherings--so I was wondering if anyone had a favorite veg roast recipe. I've been eyeing the roobibos unchuck roast recipe, but I'd appreciate any suggestions. Thanks! |

Use a vegetarian beef or chicken broth if you like, but MAKE that unchuck roast! It is remarkably persuasive to non- vegetarians. |

Thank you very much. I actually bought a package of that tea yesterday when shopping but I am not sure what the end flavor is for the roast when using it. When I make chicken-style cutlets I always use the combination of spices you suggest for the broth. They really give it a depth of flavor frequently lacking from other veg recipes. Thank you so much for this site. It is such a great resource. |

Just one more question--I'm sorry to be so annoying. I do not have an automatic bread machine but I do have a good kitchenaid stand mixer. Can you give me some idea of how much kneading would equal one cycle of the automatic bread machine? Thanks again! |

Not annoy9ng. About 20 minutes, and it really needs the hour rest in betwwen the two kneads. |
