dinner for 120

I am cooking a dinner for 120-150. I was thinking of mostacolli and also baked chicken with a salad. Green beans, corn and garlic bread. Desserts are being done by someone else. This is the second time I've done this, last year we had the suggestion of adding the chicken to suit more tastes. Is 16lbs of meat to much for the pasta, How much chicken should there be, and any suggestions would be great:) Thank you!

Tracy, you will see on the meat planning section of plan for 100 that about 63 pounds of pieces or 80 pounds of quarters (they have more skin and bone) is usual for 100 people. 1 pound of whole raw chicken gives 1/2 pound of chicken meat, which is two skimpy servings. If you mean ground meat in the sauce, I usually allow at least 22 pounds per 100 people.

Chicken is juicier and more flavorful if brind befre roasting.

Salad for 60
I need to increase this recipe for 60 people.
Broccoli Salad
1 lg bunch broccoli
1/4 c red onion
10 slices bacon
1/2 c sunflower seeds
1/2 c raisins
3/4 c light mayo
1 Tbsp vinegar
3 Tbsp sugar

This looks like a broccoli slaw salad for about 8, so you would simply do 8 times the recipe, no tricks to this one. It will be pretty! I might try craisins instead of raisins and put a few drops of roasted sesame oil in the dressing.
