My husband has just been diagnosed with celiac disease. How can I substitute rice flour, tapioca flour, or a mixture for flour in his favorite recipes? Will it turn out the same or taste all right? |

Diane, run do not walk to the nearest library or cookbook store and get the Bette Hagman "Gluten-free Gourmet" cookbooks, especially the new baking book. This is a huge transition, and you and he will have a lot of tasting to do; many recipes will adapt, some will not, and you will have to experiment. |
