Roasting baby red potatoes

I am fixing garlic parsley potatoes for 120 people this weekend. I have 40 pounds of them,(size B) and plan to bake them in two electric roasting ovens. Will this work, and approximately how long will it take to cook them? I plan on drizzling them with garlic butter throughout the cooking time, and I do not plan on cutting any of them in half unless I have to, as they are small. will this work, and what do you suggest?

How many potatoes per person?

People like these and I would make 50 pounds for 120 people. Yes, you can do them in the roasters and you should allow a couple of hours, as the roasters will be quite full. DO PAM the roasters and DO preheat for at least 20 minutes. If you don't have that long, you can parboil them half way done, chill, then roast.

Roasting parsley baby red potatoes
I would like to know how many red potatoes I need to feed approx. 175. I plan on cutting in half and using butter and parsley. Can these also be done in electric roasters and how long.
I need this for a church dinner this week.

About 70 pounds. Yes, about 15-18 pounds per roaster, be SURE to preheat 20 minites, coat pan with Pam or butter, allow an extra hour, as you lose a lot of heat when you open to stir.
