I am cooking 75 pounds of boneless prime rib for a big dinner theatre. Can I feasibly cook the 15 pound roasts in electric roasters? (I have 5 roasters) I have been told the following, but would like a second opinion: 225 for 3 hours. Roasts at room temperature before cooking. Meat thermometer at 120, then drop the oven to 150. Thanks! |

This is a pretty standard method. You will not get a crispy outside, but the pieces will be uniformly medium rare with minimal shrinkage. You do need a separate thermometer in each roast. Lift the lid as little as possible, not before 2 + hours. I usually use some kind of garlicky rub, shortening or soft butter rubbed on first, then a sprinkle of flour before putting in the oven. Do be sure to preheat the roasters for at least 20 minutes and realize you will need to put them on several different circuits (in other words, you can't plug them all in in the kitchen without blowing the circuit). |
