I am looking for a recipe that can help me cook for a large group. I would like to make a baked ziti or penne. I will be using 19x12x4 pans to make the pasta. I need a recipe to make sure I buy the right quantities. We are serving 50 adults and 40 children.

Mark,

This is good maybe you could adjust to serve more.

Baked Ziti
(serves 12-15)

Ingredients:
1 pound dry ziti pasta or rigatoni
1 onion, chopped
1 pound lean ground beef
2 (26 ounce) jars spaghetti sauce (Bertolli's Olive oil and Garlic is my favorite for this recipe)
6 ounces provolone cheese, sliced
1 1/2 cups sour cream or a little less
6 ounces mozzarella cheese, shredded
3 Tablespoons grated Parmesan cheese (I use 5 T)

Directions:
Bring a large pot of lightly salted water to a boil.
Add the pasta, and cook until al dente, about 8 minutes; drain.

In a large skillet, brown onion and ground beef together, over medium heat and drain well. Return to the skillet, add spaghetti sauce, and simmer 15 minutes.

Preheat the oven to 350 degrees F (175 degrees C).

Grease a 9x13 inch baking dish. This recipe will fill it right to the very top.

Layer as follows: 1/2 of the ziti, all of the Provolone cheese and all of the sour cream, 1/2 of sauce mixture, then remaining ziti, mozzarella cheese and remaining sauce mixture.
Top with grated Parmesan cheese.

Bake for 30 minutes in the preheated oven, or until cheeses are melted.

This freezes well...I always freeze it uncooked. Others have also told me leftovers freeze great, too.

Unless these are teens, the quantities are about the same as 75 adults- so you would want 6 times the recipe above.
