Rigatoni and veggies

Hi,
I'm chairing my sons Blue & Gold Cub Scout banquet this year. Decided to have a buffet style dinner. I'm expecting about 250 people to be there. I've order 400 pcs of fried chicken and am planning on having rigatoni as the other main dish. I was wondering how many pounds of dry pasta and how many gallons of sauce for this many? Also how man of the "club" size cans of green beans and how many "club" size cans of potatoes for parsley potatoes? Thanks!

I would make 100 people's worth of rigatoni and expect to have chicken left over. See the lotsa pasta page and my pasta recipes for some guidance on amounts; you need about 1 quart of sauce for each pound of dried pasta, and usually around 12-14 pounds of sry pasta for main dish portions for 100, depending on the recipe.

The #10 can holds 24 servings of green beans. Consider using my better green bean casserole recipe for the beans, in the holiday cooking section at the top of the big pots section; tastes better and holds better on the buffet table. You would need 4 times the recipe.

I would not use canned potatoes, they are not popular, you would do better with hashbrown casserole or my freezable, holdable mashed potatoes.
