You need 55-60 pounds of potatoes, 1 quart sauce for each 5 pounds potatoes (white or cheese, depending on how you make your scallopped potatoes) and at least 35-40 pounds boneless ready to eat ham. Cooking time depends on size and depth of pans and size of ovens, it is usually about twice as long as a standard home recipe. For xcheesier potatoes, add 1/2 pound (2 cups) shredded cheese for each 5 pounds potatoes. |
