Cooking for a shelter

We are making ham and scalloped potatoes for a food shelter tonight for 140 people. How many potatoes do we need. I went from a recipe serving 6 and I am getting that we will need between 40 and 50 pounds of potatoes. We will need to add ham to that, and I have no idea how much. If we would add cheese how much. Any help you can give will be greatly appreciated.

I would not use less that 50 pounds of potatoes, and 60 would not be too much. For each 5 pounds of potatoes, the bare minimum for cheese is 1/2 pound (2 cups shredded) and you can use double that with good effect.

For the ham, allow 4 ounces sliced ready to eat per person.
