My husband's family had a bakery for over 100 years but after the passing of his father, it closed. Now, 14 years later, we'd like to write a cook book with photos and recipes but can't find information on how to break the recipes down for home use. Any suggestions where I might start? Debbie, it is VERY VERY difficult (and often unsuccessful) to adapt commercial size baking recipes to home use; may I suggest that you consider developing a website, posting the recipes in their original quantities and inviting readers to adapt? A thread on breaking down quantity recipes on this site was recently hacked and had to be removed. If you have a particular recipe you woulld like me to look at privately, email it to the contact link at the very bottom of the page. |
