Hello, Every year I organize a 3 day 2 night canoe trip for about 9 people. The last 2 years I have been pretty successful with making sure everyone was happy with the menu. The only thing I seem to have a problem with is getting the sandwiches right. I have been taking 18in Cuban Bread loaves and using ham and provolone and pressing them in the oven, wrapping them in foil, and water proofing with plastic bags (This year I will be vacuum sealing them). The thing I have trouble with is the amount of meat per each sandwich. This year my plan is having an 18in loaf per person cut into thirds, 1/3 of sandwich per day for lunch (including chips and other snacks)..
My plan was to have That totals 14lbs.. Does this sound like enough meat for the 1/3's to be filling enough?? Everyone in the party is in their 20's (except my father) and they are all big eaters. Any suggestions would be great

OK this is how I would figure it: 9 HUNGRY people, 3 lunches, need about 1/3 the amount for 100 (27 people plus 20% for age and hunger= 33). Cheese 2 ounces per sandwich per day times 33 = 66 ounces = about 5 1/2 pounds, about 1/3 more than you have. Meats 6 ounces per sandwich per day = 198 ounces or about 16 1/2 pounds, almost double what you have. So if you stick with your estimates, you will probably have some complaints again. Good waters and good eats. |
