My daughter wants a taco bar at her wedding. I don't know how may fresh tomatoes to buy (we're planning on 100 people). Also can I cut them a day ahead or do the tomatoes need to be cut on the day they're going to be served. Thanks!! |

You need about 3 1/2 quarts, which is a bit shy of 7 pounds. If cut the day ahead, put in a colander so they don't sit in their juices, cover, and chill. |

PS, this allows 2 tablespoons per person. If you want more, you could increase to your desired amount- it partly depends on your salsa, guacamole, pico de gallo, etc. |
