potato gratin

I want to make a potato gratin for a buffet lunch.How far in advance can I make this dish?
will it reheat without drying out?
Also I am serving prawns what is the best way of keeping them cool while on the buffet? and how long can they stay on the buffet with safety.

Prawn safety- on an ice bed is ideal. If you have a Sonic drive in, they will sell you bags of the cruchlet ice, which is perfect for this. On ice, it is fine for 3 hours. No ice, 1 hour, and then a new plate, don't mix platters.

You can make the potatoes by pre-boiling the potatoes, then bake with the sauce on for service. Fully baked, it doers not reheat well.
