Hi Ellen,for a holiday open house I am expecting about 70 adults, 7 teens and 39 under 12. (!!) I have 63 large shrimp, 40 servings of meatballs, 10 lbs of ham, 40 oz of cheese for a platter (w/fruit), a couple of dips, stuffed mushrooms and desserts. I think I'll add a deli platter w/roast beef and turkey. How much should I have for the deli platter? Is this enough food? I have separate stuff (pigs in blanket, mozzarella sticks and other stuff) for the kids.

Beth, if this is more than 1 hour or over a mealtime, I am concerned you will not have enough food. See the discussion on the appetizer planning page. The teens basically count as 2 adults each, and the kids as a half adult each, so you are looking at about 100 people's worth. The usual for 100 is 20 pounds ham and 10-20 pounds cheese and cheese spreads, for example. It is also customary to have at least one of each thing for each person, and one dip is 1/4 cup plus dippers.

I would not serve the shrimp. You need to have 2 per person and so there is not enough. You could chop them and make a rolled sandwich with flour tordtillas and a shrimp salad-y or shrimp stir fry sort of filling, that would do it.

Read over my appetizer and sandwich event planning sections and see if that gives you some ideas.
