trying to put togetehr a high school sports banquet, roughly 750-800, how much food will i need, we have a limited budget, seeking meat and chicken donations, but without how do I pull this off, help....:) |

First, you need large tubs of rice and beans at the front of the table. These are high schoolers, they eat like locusts. 8 pounds each dried beans and rice per 100. See the "Spanish rice- the pink kind" recipe on the taco-texmex page. Also you need the beans for the vegetarian kids, so be sure the recipe is meat free. For the tacos, use the same topping amounts you would for the baked potato bar, which I have a whole article on. That is per 100, so I would use 8 times the amount, plus at least 10% for a fudge factor. If the budget is very tight and yo are using hamburger meat, consider a thick chili instead of straight taco beef. This would reduce four beef need to about 160 pounds.
