water in the bottom pan of a roasting pan

do you recommend that water be put in the bottom pan of a roasting pan? I have found that is gets the product to hot and over cooks it. Or maybe I am doing something wrong! Please advise

I am trying to cook my turkey in a hamilton beach roasting pan. I had just added my turkey and dressing. It was not in there 10 minutes and started to burn. What do suggest I do? I only had it turned up to like 150 degrees.

The roasters are only good for turkeys up to about 18 pounds and it is too early to start cooking that size, unless you are planning to cook and slice tonight and reheat.

No I do not put water in the pan, ever. I do preheat, I do use a roasting rack. I do NOT put the stuffing in the bottom of the cookwell and I do not stuff the turkey. I cook the dressing separately.

If you did not preheat the oven, the cooking element was on full blast and that is how you got the scorch. Always preheat the roaster for at least 20 minutes before adding the food.
