A #10 can holds 12 1/2 cups, or 25 1/2 cup servings. I use 3 cans for 50 if it is the only/main vegetable, 2 if there are others. If you get a couple of cans of Chinese vegetables with the waterchestnuts, etc, drain and stir in, you will add flavor and interest to your casserole.
