Noodles as a side dish

I am making noodles to be used as a side dish for a free to the public Thanksgiving dinner at our church. We are cooking for 200 people. I am planning on getting 24, one pound bags of PA Dutch style noodles, and cooking and holding 2 roasters full for about 2 hours in advance. we have a large kitchen and I can get roasters to hold them if I need to. I was told to be very careful trying to hold hot noodles as they tend to continue cooking to mush. Should I try to cook these noodles all ahead and refrigerate them or can I cook them fast enough to keep up after the initial surge at the buffet? I am cooking them in a Turkey based broth, using a commercial broth base to make the broth. I want to cook them in the broth to get the added flavor. Is 24 pounds enough for a buffet side dish for 200 people?

24 pounds is plenty. Cook ahead, oil and chill, as described in the lotsa pasta spaghetti page. Make a nice sauce- creamy mushroom, alfredo with cream cheese, etc- mix morning of and put in the two roaster cookwells (the removable pans) which you have previously sprayed heavily with non stick and maybe dusted with Parmesan (the inexpensive grated form). Bake covered at 300 degrees for the two hours, turn down to 160, sprinkle on some crushed French fried onions (like green bean casserole). It will be very good.
