can I use mazipan instead of almond paste to make almond (no coconut) macaroons??? |

Marzipan is almond paste with sugar and (usually) egg white added. It might work, but you should try a small batch first. |

It is easy to make your own almond paste by grinding a pound of blanched almonds in a blender until very fine, adding a pound of confectioners' sugar, processing again, and mixing in two or three egg whites and about a teaspoon of almond extract. |
