I made a batch of seitan from scratch once and would like to know more about how to do it in a food processor. Should I mix the flour and water by hand and then put in the processor? How much (quantity) and how long should I process it? Do I let it sit and repeat? I'm making a vegan thanksgiving dinner and want it to be great!! Thank you, lauren |

I don't use a processor for seitan from scratch, you need a kneading motion. First, I would use my unchuck recipe or one of Bryanna Grogans recipes from the same method, vital wheat gluten plus additions with bread machine and crock pot. If I did make from scratch, I would take the raw gluten and knead in an equal amount of dry ingredients from the unchuck recipe, minute tapioca, seasoning, soy, etc plus liquid as kneaded to mix. Plain old gluten will NOT give you the holiday level results you are seeking. Do go to Bryanna's site, she is a mighty vegan cook and has whole articles on vegan thanksgiving dishes. |
