I want to make tacos dorado or flautas for 100 people. How much chicken will I need. I plan to put just chicken in the tortilla, roll it and fry it. When I serve it I will put the 2 flautas or taco in a mole sauce and servie them covered with mole with quedso fresco and lettuce on top. |

Sounds good. If these are the pencil-like flautas we see in south Texas, you only need to allow 1/3 cup ready to eat meat for 2en make 3 per serving, though, for adults- we oft. 1 cup ready to eat meat starts out as 1 pound whole chicken and ends up as 8 ounces usable meat. 3 cup would make about 5 tacoos dorado, they take a bit more meat. You would of course have rice and beans and extra tortillas with that? |
