I have been asked to prepare 500 regular size roast beef sandwiches, I am wondering how much meat to prepare and what would be the best cut of meat for sandwiches? We will be serving baked beans and chips with the sandwiches. Thank you. |

Top round, slow roasted medium rare and sliced very thin (like, with a deli slicer) is your very best bet for this task. You can make 5 regular sandwiches from 1 pound cooked ready to eat thin sliced, but it cooks down a full third, so you need 1 1/2 pounds raw boneless well trimmed for each 5 sandwiches. That is 150 pounds raw. Be sure to see a wholesale butcher or restaurant supply grocer for this, unless you are VERY goood friends with a local butcher... |

So a 15# top round roast should be plenty for open-faced roast beef sandwiches along with mashed potatoes and gravy for 50, right? It's a late (9PM) after-meeting lunch.... |

No, when you have a smaller group you need a somewhat larger amount, and open face uses more than regular- the hot roast beef and gravy sandwich usually requires 4 to 5 ounces cooked ready to eat, which is at least 18 pounds raw boneless- 22 would not be too much. |

I just called for prices which ranged from $2.50-$3.50#.... The former is probably select but the second guy is a butcher we normally trust and suggested choice is the only way to go. For slicing on a deli slicer super thin, select should be good enough do you think? I'd hate to put out something awful, but if choice is the only sure way I'll have to come up with something else.... I only have a budget of $50 or so. |

What about sliced turkey? Cheaper and very good. 30-35 pounds whole turkeys would make enough. |

I have made some awesome open faced turkey sandwiches with bread, a small scoop of stuffing, turkey (about 2 1/2 -3 ounces) with gravy over the sandwich and mashed potatoes. That might reduce your costs. it tastes wonderful. |
