The menu is: veggie tray, green salad, baked ziti with meatballs, spiral sliced ham, chicken/peppers/sausage casserole, kielbasa & sauerkraut, sandwich tray, potato salad, pineapple souffle, sheet cake and trays of Italian cookies.

How much should we make of each?

Nancy, since I posted my quantity estimating tables in 2004, I am not doing initial estimates. I will be glad to check your estimates if you post them.

My amounts assume it is a full meal- if a reception (not at a regular meal time), you need about 20% less.

It is quite difficult to plan for this many entrees, because it depends so much on local preferences, but here is a possible combo:
baked ziti with meatballs, about 75 servings

spiral sliced ham,
chicken/peppers/sausage casserole,
kielbasa & sauerkraut,
I personally would skip either the kielbasa (most likely) or the chicken and sausage. 2 ounces ready to eat ham, 3 ounces sausages per person

sandwich tray, 1/2 sandwich (2 tea sandwich size) per person. I would probably offer small rolls and let people make their own from the ham and other fillings- easier and wastes less- made sandwiches don't keep if not eaten


potato salad, about 3 1/2 to 4 gallons
pineapple souffle, is this a cold dessert? about 1/3 cup per person
sheet cakea full sheet cake 18x26 cuts 100 modest pieces
trays of Italian cookies 1 of eachkind per person up to 4 total.
