 Collards 200 lb purchased fresh or frozen?
 ~2 pounds as purchased=1 pound frozen or ready to cook=serves 4.  This is a lot of collards unless everyone in your area loves them, especially since youare also serving the cabbage

 Cabbage 100 lbs
 ~plenty, especially with the collards
 Mac & cheese 40 lbs dry pasta
 ~(how much cheese, milk, eggs???)
 see the mac and cheese for 100 recipe in big pots for the "fixings".  Some added Parmesan goes a long way toward the cheesiest.

 ~fine with the cornbread
 Butter 25-30 lbs
 ~Yummy.  Yopu may have some left, or not. Consider one or 2 #10 cans of strawberry preserves
